CULINARY SCHOOL ITINERARY At One&Only Reethi Rah Culinary School, the essence of delectable international cuisines - their distinctive flavours, intoxicating aromas and unforgettable dishes - is shared in an engaging and dynamic environment. Under the expert tutelage of our culinary team, learn the fine art of harmonising unique tastes and textures, as well as the delicate nuances of food presentation. 12pm 1pm Meet at One&Only Reethi Rah s wine cellar, Epicure. The Chefs will begin by introducing the culinary courses before demonstrating their master skills. Then under their watchful eyes, you will prepare the dishes. Enjoy a sumptuous lunch of your own exquisite creations. The experience starts in Epicure, our Wine Cellar, where our Master Chef greets you and introduces the course that you have chosen. The second step is to select the finest cooking products and condiments from around the world including wines, vinegars and oils. Finally, under expert guidance, you will explore the creative depths of your selected cuisine style as you prepare exquisite dishes on your own. Follow your passion and perfect your skills through this interactive experience, and take home delicious memories and a life-long talent. 2.30pm Conclude. THE COURSE INCLUDES: Certificate of attendance, refreshments, lunch, recipe card. HOW TO BOOK: Please contact your Concierge at least one day in advance (before 4pm). 4 A WORLD OF FLAVOURS Choose from a variety of culinary styles from around the world. MALDIVIAN CUISINE The Maldives is comprised of more sea than land, so fish mainly tuna has always featured prominently in the Maldivian cooking. Ingredients rich in starch, such as rice, as well as oriental seasoning and vegetables are also widely used, as is coconut milk (a key ingredient in many Maldivian curries). Maldivian cuisine encompasses Arabic, Indian, Sri Lankan and Oriental tastes, all blended into a unique cuisine that embodies a culinary identity of its own. INDIAN CUISINE Indian cuisine is characterised by the extensive use of spices most notably different types of curry as well as herbs, vegetables, and fruits native to India. Indian society is known for its widespread practice of vegetarianism, and throughout the country s various regions, the cuisine reflects a wide assortment of dishes, specialty ingredients and cooking techniques. The Portuguese, Persians and British have all made important contributions to Indian cuisine as well. CHINESE CUISINE An ancient Chinese proverb reveals: To the people, food is heaven. Indeed, Chinese cuisine ranks among the world s most popular. For most dishes, one of the five main taste sensations sweet, sour, bitter, spicy or salty is used as the foundation. Chinese cooking also pays particular attention to presentation techniques and cooking temperatures. Key ingredients include rice, vegetables, chicken and seafood. ITALIAN CUISINE Italian cuisine has developed through centuries of social and political changes, with roots as far back as the 4th century BC. It is also heavily influenced by Etruscan, ancient Greek and Roman, Byzantine, Jewish and Arabian cuisines. Perhaps the most notable characteristic of Italian food is its extreme simplicity, with chefs putting more emphasis on the quality of ingredients versus an elaborate presentation. Key ingredients include pastas, cheeses, olive oils, basil, nuts, fresh vegetables, meats and lots of fish, all of which vary through the country s many regions. Coffee, specifically espresso, has become important in Italian cuisine. ARABIAN CUISINE Arabian cuisine is based around large family gatherings, with much sharing and a great deal of warmth over the dinner table. In an average Gulf Arab State household, a visitor might expect dinner to consist of a very large platter, which is commonly shared, comprising a vast amount of rice, incorporating lamb or chicken with various stewed vegetables, heavily spiced, sometimes accompanied by a tomato-based sauce. Lamb and chicken are the most used, with beef used to a lesser degree. Butter and cream are also used extensively. PEKING DUCK - CHINESE CUISINE
5 Uncover the secrets of the world s most popular cuisines. JAPANESE CUISINE Japanese food is an art, creatively crafted as a visual feast for both the taste buds and the eyes. The staple for this cuisine is rice gohan. In Japan, rice is a key component in all three meals of the day. Sugar, soy sauce and sake are used extensively and artificial flavourings are rarely used. Seafood and meat are key components as are crisp fresh vegetables that add texture to the food. Japanese cuisine is known for its emphasis on the seasonality and quality of ingredients, as well as its presentation. Please note that Japanese culinary classes are held in Tapasake Restaurant. FRENCH DESSERTS/PASTRIES A French chef named Antoine Carême was reportedly the first person to incorporate art in pastry making in France. A range of delectable pastries originates from the country including puff, choux, brioche, napoleons, cream puffs and éclairs. THAI CUISINE Thai cuisine is regarded for its abundance of flavours, but contrary to popular belief, dishes do not have to be hot and spicy. A harmony of flavours is blended together in each individual dish. In a curry, for example, the sharpness of the chillies and the spices is counterbalanced by the smooth sweetness of coconut milk, the saltiness of fish sauce and aromatic flavour of the herbs and vegetables. Thai food is known to balance the five fundamental taste senses spicy, sour, sweet, salty and bitter in each dish as well as the overall meal. FRENCH PASTRIES
